Residence Operations & Foodland Ontario Update

Craig Clifford, Rez Dining Unit Manager, Hospitality Services, ccliffor@housing.uwo.ca

Since our new partnership with Foodland Ontario began in September of this year, we have been steadily promoting "local" (specifically Ontario) grown foods in Residence Operations. We started the campaign with our "Field to Fork" menu near the end of September featuring Chef-prepared dishes utilizing all Ontario produce, Ontario rainbow trout and making the most from the season's bounty. The dinner was well-received by students and the food was fabulous! Sure to be an annual event in residence dining halls.

Promoting Foodland Ontario

The first week in October we hosted our annual "Apple Week", where we offered students four different varieties of freshly-picked, local apples and a different apple dessert each night throughout dinner service, such as apple crisp, apple blossoms, apple brown betty and everyone's fav - apple pie.

In November we launched our "Chef's Table" series. Each of our residence Chefs, throughout the months of November, January and February, will be featuring an intimate cooking demonstration and food sampling for 450+ students in each of their respective dining halls. The series is designed to offer students some fun and educational cooking tips on how to utilize Foodland Ontario products. Chef Kurt Leumann wowed us with his "Warm Ontario Apple Fritters" and Chef Ryan Stephens revved it up with his "Pan-Fried Ontario Perch". We're all looking forward to upcoming Chef's Table features! Well folks, that's it for now. Stay tuned for more delicious updates from Residence Operations and Foodland Ontario.
